Fisher Approved Spinach Muffins

Fisher has been doing so much better on his eating! Over the last 2 weeks his appetite has improved and he has been wanting more food than ever before. I think he just needed a little public shaming to step up his game. You can catch up on all #Fisherhatesfood posts below.

I'm gonna share a Fisher approved recipe with you today!! The original recipe came from weelicious. I adapted it a little to make it a tad more healthy. I doubled my amounts too because 12 muffins won't last 24 hours in my house. My measurements will make 24 muffins. I cut out half of the sugar and half of the salt and they are still yummy!! Too bad they aren't Daniel Plan approved! Oh well! Baker ate 5 the first afternoon and Fisher ate 2. These muffins are sweet and yummy. The are even fairly healthy.

Spinach Muffins

  • 1 cup unsweetened applesauce
  • 2 eggs
  • 4 teaspoons vanilla extract
  • 2 cups fresh spinach, packed
  • 1/3 cup sugar
  • 4 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  1. Preheat oven to 350 F
  2. Place first 6 ingredients in a food processor and puree.
  3. Place the remaining ingredients in a separate bowl and combine.
  4. Pour the spinach puree in a large mixing bowl.
  5. Slowly mix the dry ingredients into the wet until combined.
  6. Scoop batter into a greased muffin tin, filling 2/3 of the way.
  7. Bake for 12 minutes

Fisher approved!! Do yourself a favor and make these for your kiddos ASAP!
